If I could promise a delicious, healthy and satisfying breakfast that is ready in 90 seconds, would you give me a kiss? What if I told you it didn’t require a single pot, pan, knife, or cutting board? Well then…get over here and give me a smooch!
Apple Cinnamon Pumpkin Oatmeal is full of creamy, Vitamin A-packed pumpkin and plenty of tart, Vitamin C-rich apple. (We are fighting off colds left and right in my house this week so we need all the Vitamin C we can get!)
By using a hand held grater, such as the coarse grater from Edgeware, there is no need to dirty a knife and the apples cook in much less time than if they were chopped. My favorite part? The skin stays on which is full of fiber and nutrients (not to mention gorgeous color.)
Just pop the entire bowl in the microwave and after a couple minutes of relaxing with a cup of coffee, you will be rewarded with a steamy bowl of heart-healthy oatmeal.

- ½ c oats
- ½ c skim milk
- ¼ c water
- ½ tsp vanilla
- ¼ c pure pumpkin
- ¼ c grated apple (about half of one medium apple)
- 1 tbs walnuts – chopped
- 1 tbs toasted wheat germ (such as Kretschmer)
- ½ tsp cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground cloves
- pinch salt
- Stevia or sweetener of choice
- Carefully stir together all ingredients in a microwave-safe bowl.
- Microwave for 90 seconds, stir, then microwave 30 additional seconds or until desired consistency is reached.

What a great combination of flavors! I might try this on the stove (don’t own a microwave)
Of course – we often use the stove too!! Both work perfectly.
What kind of oats did you use? Can you use GF steel cut oats?
Typically I use old fashioned oats for this. Steel cuts would definitely work but you would want to double the amount of liquid and cook longer. When I make steel cut oats I usually add the apples about 5 minutes prior to the end of the cooking time then stir in pumpkin before serving. Hope that helps!!
