Healthy Pumpkin Recipes for Fall

Pumpkin rocks my world all year round so when Fall rolls around and everyone else gets a little pumpkin crazy, I am one happy gal. Pure pumpkin is not only versatile and delicious, but it is also full of health benefits. Here are a few reasons to eat pumpkin all year round:

  • Vitamin Packed: One serving of pumpkin provides 300% of your recommended daily value for Vitamin A which helps prevent cell damage and maintain good eye sight.  It is also a good source of Vitamin C, zinc, iron and Vitamin E.
  • Mood Booster: Pumpkin is a good source of tryptophan which helps the body produce the serotonin, the feel-good hormone helping to reduce stress levels.
  • Fights Cancer: Beta-carotene found in pumpkin is a powerful antioxidant that helps block the growth of cancer cells.  Pumpkin is one of the highest sources of beta-carotene providing 17 mg per 1 cup.

Pumpkin definitely rocks. I tried an overnight crock pot pumpkin spice steel cut oatmeal recently that was amazing. Love all these recipes Liz, and thank you so much for including mine!
