Greek Chicken Pasta Salad with Feta and Herbs

Greek Chicken Pasta Salad - The Lemon Bowl

Do you ever find yourself in a chicken rut? Who doesn’t. Greek Chicken Pasta Salad with Feta and Herbs promises to pull you and your family right out of that chicken rut, pronto.

When it comes to cooking lean cuts of meat such as boneless, skinless chicken breasts, I need you to raise your right hand and repeat after me:

Greek Chicken Cubes - The Lemon Bowl

  1. Thou shalt not overcook thy chicken breasts. I will remove said chicken breasts from the pan the minute they turn golden brown.
  2. Salt is not the enemy. Too much salt is the enemy. I promise to properly season my chicken breasts.
  3. Fresh garlic makes food taste good. Bottled garlic tastes bitter.
  4. Herbs are my friend. I vow to keep fresh parsley on hand at all times and a well stocked pantry with dried herbs.
  5. Lemon juice comes from a lemon, not a plastic bottle.

Ready to dive into a big bowl of Greek Chicken Pasta Salad with Feta and Herbs? Head over to Doughmesstic for the recipe where I am guest posting today (while my girl Susan is basking in the sun on a cruise!!) Just call me Jealous Julie. :)

Haha, you just listed every reason why people THINK they hate chicken. Now, would you care to share that pasta salad with a fellow SW Michigander? :)

Liz,
I think these flavors would work amazing on a pizza, and have bookmarked the recipe over on Doughmesstic to try when tomatoes are in season for me (and my CSA farm share!).
Thanks!

Great idea!! Sundried tomatoes or roasted roma tomatoes are another great idea for non tomato season!

I have to say, I cringed a little inside when I read that lemon juice comment… haha you know my secrets now! If it helps, I have half a lemon in the fridge just waiting to be squeezed into a recipe tonight… :)

LOL – I love that you noticed the comment. ;-) My husband always teases me at the grocery store when we pass the bottled juice asking if I want some because he knows I hate it. :) Happy lemon squeezing!
