Fresh cilantro, bright lime juice and smoky chipotle pepper in adobo give this healthy black bean dip delicious flavor.Recently I was downtown shopping with my BFF visiting from Chicago when we stopped in to a fun local foodie market full of delicious goodies. Olive oils, hand crafted soda pop, artisan cheeses, vinegars and more. In other words, it was my version of heaven.
One item that caught my eye was a delicious looking black bean dip that was begging for my favorite blue corn tortilla chips. The price tag? $6.00 for a 12 oz jar! Hard to justify when I knew I could go home and make it for less than $2.00. So I went home and did just that.

Speaking of delicious, chipotle peppers in adobo sauce are the star ingredient of this dip. You can find them in most grocery stores, international markets or online. Deep, woodsy, smoky and delicious – this will be the ingredient that has your friends begging for the recipe. If you prefer a more mild dip, remove the seeds from the peppers which is where most of the heat lives.
Wondering what to do with the rest of the chipotle peppers in the can? Mince them finely and place in a small resealable plastic bag then pop it in the freezer for a later time. I love adding chipotle peppers to chili, burgers, marinades and more.
Your carrot stick is waiting
- 15 oz can black beans - drained and rinsed
- 1 cup fresh cilantro - roughly chopped
- 1 cup salsa
- Juice of one lime
- 2 chipotle peppers in adobo
- 2 garlic cloves
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- salt and pepper to taste
- Place all ingredients in a food processor or high speed blender and puree until smooth.
- Check for seasoning and add salt and pepper to taste.
