If there is one recipe our family tends to gravitate towards on a regular basis, it is most definitely turkey meatloaf muffins. These last few weeks of my pregnancy have kicked exhaustion levels into high gear so any dinner I can put together from start to finish in less than 30 minutes is a regular in our house.
My husband is Italian and loves classic American comfort food which is how I came up with this spin on traditional meatloaf. Since a regular sized meatloaf can take close to an hour to cook, I love using a muffin pan to cut the cooking time in half. As an added bonus, the pre-portioned loaves help you keep calories in check while also stretching your food budget by dividing a pound of meat into 8 muffins (four servings.)
