As the weather cools down and we head further into autumn and flu season, it is extremely important to keep our bodies energized and nourished with plenty of vitamins and minerals. Even though farmers market season is coming to a close in much of the country, that doesn’t stop me from filling my diet with fresh produce. No matter what time of the year, I know you will love these new recipes I created for HumanaVitality®.
My Ginger Pear Green Smoothie is not only creamy and satisfying but it is quite affordable: just $1.60 per serving. Certainly beats the $7.50 green smoothie I bought at a local juice shop recently! Cost saving tip: if you have leftover ginger root after making this smoothie, freeze it in a small plastic bag and use it for months to come in stir-fries, Asian-style soups and future smoothies. Added bonus: frozen ginger is actually easier to grate than fresh!
For a fruity spin on a traditional pico de gallo, I added fresh mango to add a hint of sweetness to complement the tangy lime juice and spicy jalapeño in my Black Bean Mango Pico de Gallo. I could eat the entire bowl on it’s own with a handful of Baked Corn Tortilla Chips but it also tastes great as a topping for grilled fish, chicken or pork. Fun fact: the Vitamin C found in the mango will actually help your body absorb the iron-rich black beans. Boom!
Get a head start on your day and prepare these hearty and satisfying Overnight Refrigerator Oats with Seasonal Berries the night before. In the morning, you can eat them cold, room temperature or warm them in the microwave for a minute or two. If you don’t have fresh berries on hand, use whatever ripe fruit is ready for consumption. We love freezing berries over the summer and using them in oatmeal (and smoothies!) all winter long. They will defrost perfectly overnight or you can warm them up in the microwave in the morning.
