Mexican Turkey Soup

Transform Thanksgiving day leftovers into this hearty and satisfying Mexican Turkey Soup.
Mexican Turkey Soup - The Lemon BowlOne of the best aspects of Thanksgiving is having a fridge full of leftovers for days to come! In fact, our family usually has so much food leftover that we encourage guests to BYO tupperware containers to fill before heading home.

sandwichOf course, after you’ve enjoyed the obligatorily leftover turkey and cranberry sandwich, your family will probably be begging for something new. My Mexican Turkey Soup is packed with garlic, onions, peppers and spices that completely transform leftovers into an entirely new dish.

I didn’t get any left over turkey this year!! I’m still pining after my post-Turkey Day sammich with cranberries. But I do have some leftover chicken that woudl be PERRFFECT for this. And I mean, it’s totally soup season.
