Roasted Beet Salad with Pistachios and Goat Cheese - The Lemon BowlWhen I created this salad, I definitely had Hanukkah in mind, but it would be perfect for Thanksgiving, Thanksgivukkah, Christmas or any day that ends in a Y. I’m a huge fan of roasted beets and in fact, my very first blog post was a Roasted Beet Salad with Wheat Berries back in June of 2010.

BeetsThe thing is, if someone tells me they don’t like beets I will always challenge them. 99% of the time, their only experience with beets involves a can and a metallic after-taste. If you are worried your guests won’t like this salad, I urge you to give it a chance. By slowly roasting the beets with fresh rosemary and orange juice, the natural sugars are able to caramelize creating a tender and succulent vegetable that tastes nothing like they would ever expect.

    I love beets, and this salad looks amazing, beautiful picture of it! And what a good point you make, people who don’t like beets always reference some awful encounter with beets that came out of a can! I love a good roasted beet salad, so i’ll definitely have to try this one!

    What a perfect combination of the beets, goat cheese and pistachios. I made this for Thanksgiving with our garden grown beets and it was a huge hit.

    I’ve been thinking about pairing the case of juice oranges with the bag of farm share beets, so I’m looking forward to trying this. I’ve got a book on roasting from the library and apparently I’ve been *steaming* my beets in foil all along, not roasting them. Learn something new every day. Off to check out your recipe–thanks!
