Perhaps it’s the never ending Michigan winter or the simple fact that my mom has always taught us the importance of starting each morning with whole grains and fruit.

Fruit is my favorite way to boost the nutrition of a bowl of oats which is why you’ve seen me do it with berries, bananas and even pumpkin.

Maple Syrup Oatmeal with Apple Butter - The Lemon BowlOf course, I couldn’t resist adding a drizzle of pure Michigan maple syrup which we had on hand. It helped balance out the tartness of the apples and added a creamy consistency that transformed the entire dish.

If it’s any indication of how good this turned out, my 2 year old son ate 3 bowls. In fact, I ended up having to make a second batch so that I could eat some.
