As you’ve probably gathered by now, we eat some form of Asian food every single week. I love using basic Asian pantry ingredients to transport my plate to the other side of the world and bring back childhood memories.
Growing up, my dad would take me and my sisters out for “Sushi Saturday” every weekend. Sunday dinner often took place at a local Vietnamese restaurant where I learned how to roll my own bbq pork fresh rolls at the age of 12. And a visit to Berkeley to see my dad’s side of the family was never complete without a trip to dim sum in San Francisco’s Chinatown.
If you’ve ever ordered tandoori grilled chicken, you’re probably familiar with some form of peanut dipping sauce. You know what I’m talking about – that dish on the side that is creamy, sweet, sour and nutty. - ½ cup creamy natural peanut butter
- 2 tablespoons soy sauce - low sodium
- 2 tablespoons red curry paste
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- ½ cup Silk Unsweetened Coconutmilk
- chopped peanuts - optional garnish
- In a medium bowl, whisk together peanut butter, soy sauce, curry paste, lime juice and fish sauce until smooth.
- Slowly drizzle in the Silk Unsweetened Coconutmilk and whisk until smooth and creamy.
- Serve with veggies or as a dip for grilled meats, fresh rolls and more.
