Friends frequently ask if I grow a garden because I love eating the rainbow and cook with a wide variety of fruits and vegetables. The sad truth is that I have a black thumb and about the only thing I can grow is herbs. But let me tell you, I grow them well.
Fresh mint is always in our garden starting in the spring and lasting through fall. The bright, clean flavor is delicious in Middle Eastern classics like tabbouleh, infamous in Vietnamese fresh rolls and a star ingredient in one of my favorite cocktails, the mojito.
We toss fresh mint into our Lebanese dinner salad and, most recently, I’ve begun adding a few sprigs to our morning smoothie. The sweet, clean flavor balances out the spicy ginger and tart lemon in the most delicious of ways.
For a major protein boost, I use Stonyfield plain Greek yogurt and a scoop of protein powder for a one-two energy punch. The end result is a creamy, dreamy, minty green protein smoothie just in time for spring.

- 4 cups baby greens (i.e. spinach, kale, etc.)
- 1 ripe banana
- 1 cup Stonyfield plain Greek yogurt
- ½ cup protein powder (such as Bob's Red Mill) + ½ cup water
- ¼ cup parsley
- ⅛ cup fresh mint leaves
- 1 in. piece ginger root - quartered
- 2 tablespoons lemon juice
- ice to taste
- Place all ingredients in a high speed blender and puree until smooth. Add enough ice to reach desired consistency.
