    I have never been a huge fan of sweets, you’ve probably gathered that by now. But one dessert I can always get down with? Ice cream. Specifically, chocolate peanut butter ice cream.

    We live within walking distance to my favorite local ice cream shop that I’ve been going to since I was a little kid. They opened their doors for the season March 1st and once again I’ll have to start reinstating my strict twice a month ice cream shoppe rule.

    The solution? My fast, easy, and much healthier homemade peanut butter magic shell. Made with just two simple ingredients: natural peanut butter and coconut oil, it literally takes just minutes to prepare.

    Of course, I love drizzling it over chocolate ice cream but it is also delicious as a dip for fresh fruit like bananas or apple slices for a fast after-school snack. Heck, you could drizzle it over oatmeal or waffles for all I care. I won’t tell.

    Ingredients
     

    • ¼ cup creamy natural peanut butter
    • 2 tablespoons coconut oil
    • ice cream of choice (to serve)

    Instructions
     

    • Place the peanut butter and coconut oil in a small microwavable bowl and heat until fully melted, about 40 seconds, stirring once at the halfway point.
    • To serve, drizzle over your favorite ice cream.

    1. Peanut butter is such a gift to mankind. Totally delicious to eat plus it’s packed with tons of nutrients, good fats and protein. Yussss. I’ve never eaten it as a frozen topping but this sounds magical Liz! Such a simple but inspired idea. Love your photos too (melty ice cream is ALWAYS drool-worthy!)
