Sweet, tart apples and creamy, sharp cheddar are the perfect match for crispy sweet potato puffs. The perfect finger food!
Several weeks ago, my friend Kristin flew to Michigan to visit from Newport, Rhode Island. Any friend that travels to Michigan in the middle of January is a friend for life and this was her second year visiting in a row!
Kristin and I met over 10 years ago when we both graduated with Hospitality degrees and started working for Marriott International in Boston. Although we’ve never worked in the same hotel and live many states apart, we remain close friends and chat almost daily.
To celebrate Kristin’s visit, I hosted a little cocktail party so that she could meet a few of my Michigan girlfriends and vice versa. Confession: despite being the “party planning person” in every group of friends I belong to, I had not hosted a party since before I got pregnant over 2 years ago!!! A huge shout out must be given to my friend Sandy whose gorgeous parties and effortless entertaining tips finally gave me the nudge to get back in the party planning saddle.
The event was a huge success and it was so fun to spend the night giggling, eating, dancing and chatting with my girls. Note to Self: If you invite over a friend who happens to be a Personal Trainer and Zumba instructor, don’t be surprised when she has you doing squat thrusts in heels.
Enough about exercise…let’s talk about the food!
The star of the evening? Apple, Cheddar and Sweet Potato Bites! As I’ve mentioned before, my mom would often set out apple and cheese slices after school. As an adult, I love bringing back those happy flavor memories in various forms including my Grilled Cheese Sandwich with Apples and Farmer’s Cheese and Grilled Cheese with Apples, Dijon and Kohlrabi.
Sweet, tart apples are the perfect match for sharp, creamy cheddar cheese. Throw sweet potato puffs into the mix and your taste buds will be sent to cloud 9! Whenever I set out a platter, they were cleared in minutes. Always a good sign!
Your friends are waiting.
