We are not quite in the thrust of apple season but my Farmer’s Market is starting to sell a few early varietals. As Fall approaches, I will inevitably find myself wanting to buy more and more apples each week – just because I want a taste of every new type as they become available. I’ll stand, stare, smell, smile, and debate what on earth our house of two will do with more apples. The farmer will tell me “they make great baking apples!” and I’ll politely smile knowing full well that the last thing we need in the house is a pie.

Fret not…I have come up with the perfect dessert that comes in under 150 calories and tastes like apple pie. This recipe is the perfect way to utilize those tart and tangy apples that aren’t quite sweet enough to snack on alone. The warm bowl of cinnamon-scented apples will taste like Fall in a bowl. I highly suggest topping them with a scoop of Edy’s Slow Churned Caramel Delight ice cream. Of course, Hagan Daz Dulce de Leche would be equally appropriate.

5 Minute Baked Apples A La Mode

Ingredients
 

  • 1 small apple (thinly sliced)
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • 1 packet stevia (or sweetener of choice)
  • 1 tbs water
  • 1 scoop Edy’s Slow Churned Caramel Delight (to serve)

Instructions
 

  • Place apple slices, cinnamon, ginger, stevia and water in a small bowl and microwave until tender, about 2 1/2 minutes.
  • Serve with scoop of ice cream.
