These rich and fudgy chocolate peanut butter energy bites are perfect for on-the-go snacking!

Ready or not, back to school is right around the corner which means our life is about to go from 0 to 100 overnight! Don’t get me wrong, I’m looking forward to the structure and routine that a new school year brings.

That said, now that both of my boys are going into school all day for the first time, this means one thing: Mama needs more portable, on-the-go healthy snacks than ever before! I mean let’s be real, we couldn’t last 1 hour in a blueberry field without stopping to snack on Stonyfield kids pouches so you can imagine how many snacks are involved when packing a kid’s backpack for a full day at school.

Aside from Stonyfield kids pouches, one snack I always try to keep on hand during the school year are homemade energy balls such as these Fudgy Peanut Butter Energy Bites. Easy to make and way more affordable than any store-bought protein bar, I love making them at home so I can control the quality of ingredients.

Speaking of quality ingredients, I always feel good about handing my kids Stonyfield yogurt pouches when they ask for a snack (for the 100th time.) Not only are they made with 100% organic whole milk yogurt, they contain 35% less sugar than the leading kids’ yogurt.

They’re the perfect combo with my homemade energy bites made with walnuts, creamy natural peanut butter and antioxidant rich cocoa powder. For sweetness I use organic dates that have been soaked in warm water to soften.

While the peanut butter is totally optional, I love mixing it in to give a hint of salty goodness that takes these brownie bites to the next level.

Fudgy Peanut Butter Swirl Energy Bites
Ingredients
- 1 cup dates (pitted)
- 1 cup walnuts
- ¼ cup cocoa powder
- 1 teaspoon vanilla
- ¼ teaspoon salt
- ¼ cup creamy natural peanut butter
Instructions
- Place dates in a medium bowl and cover with warm water. Let soak for 5 minutes to soften then drain.
- Add drained dates and all remaining ingredients into a food processor and pulse until mixture turns into the consistency of sand. (Depending on your food processor, this could take several minutes so don’t worry if it doesn’t happen right away!)
- Remove blade from the unit and place mixture in a medium bowl. Carefully stir in the creamy peanut butter until evenly incorporated.
- To form balls, press mixture into a small stainless steel scoop then roll in between your palms to form evenly sized bites. Continue until mixture is gone. Refrigerate until you’re ready to eat.
