My naturally gluten free version is made with a blend of both wild and brown rice for added texture, flavor and nutrients. Toasted almonds add a warm, nutty aroma to the dish plus a hefty does of healthy fats. At the end, dried apricots and fresh parsley are tossed in for a bright, slightly sweet finish that perfectly complements the rest of the rice stuffing.
