Ok friends, we’ve officially made it to week 3 of the 28 Days to a Healthier New You healthy living challenge! In case you missed it, in Week 1 we encouraged you to Cook at Home More Often and in Week 2 we challenged you to Take 10,000 Steps a Day.
This week we are back to focusing on the nutrition aspect of healthy living and challenge you to incorporate more fruits and vegetables into every meal! While most of us are pretty good about getting in one or two servings of the same two or three vegetables a day, Dara and I want to encourage you to get out of your comfort zone and try incorporating a wider variety of fruits and vegetables into your diet this week and beyond.
To get you started, I’m sharing one of my go-to green smoothie recipes. Completely versatile and customizable, I love using a combination of leafy greens (such as Simple Truth organic baby spinach), parsley, apple, orange, ginger and lemon juice. For extra antioxidants, I love adding cinnamon and turmeric as well.
If you don’t have spinach on hand, try swapping it out with kale. No parsley? Try mint instead. This recipe is a great way to use up whatever fruits and vegetables you have on hand. For maximum nutrition, I blend the fruit whole with the skin on so that I get all of the fiber and other nutrients in the skin. Additionally, unlike juicing, smoothies keep you fuller longer because it takes your body longer to digest.
Your straw is waiting.
- 2 cups Simple Truth Organic Baby Spinach
- 1 cup parsley
- 1 medium orange peeled
- 2 tablespoons lemon juice
- 2 inch piece ginger root peeled
- 1/2 medium apple
- 1 tablespoon flax seed meal
- 1 teaspoon turmeric
- 1 cup water
- Place all ingredients in a high speed blender and puree until smooth. Serve as is or over ice.
