Blue Cheese can be made healthy! By swapping out some key ingredients you can enjoy all of that tangy blue cheese goodness without any of the guilt!

Do you eat the same tossed green salad night after night after night? Put and end to the sad-salad rut by trying my favorite warm-weather treat: Grilled Romaine with Blue Cheese Dressing. The first time I heard about grilled romaine, I was a bit skeptical. The thought of heating up lettuce made me think of watery, limp leaves that were anything but tasty. Turns out – grilling gives the outside of the romaine head a nice char while keeping the inner leaves crisp and crunchy. It literally takes a few minutes and I guarantee you’ll have your guests talking. (Or at least their taste buds.)
My blue cheese dressing is typically about 140-150 calories for 2 tablespoons. By whipping up a healthy version at home, you can load your plate with up to 1/4 c of dressing for less than 100 calories. My trick? Swap mayo or sour cream for plain yogurt and boost flavor with low calorie ingredients such as horseradish, garlic and lemon juice. The end result? All of that tangy blue cheese goodness without any of the guilt.

Homemade Blue Cheese Dressing
Ingredients
- ½ c crumbled blue cheese
- 1 c plain yogurt – low fat
- 2 cloves garlic (grated)
- ⅓ c lemon juice
- 1 tbs horseradish
- Salt and pepper to taste
Instructions
- Whisk together dressing (blue cheese through horseradish) in a small bowl.
- Check for seasoning and add salt/pepper to taste; set aside.
- Serve with chopped vegetables and drizzle dressing on top as shown in photo.
