Take your lunch box game to the next level by swapping out mayo with hummus in your next sandwich such as these tasty Hummus BLTs!
School has been in session here for a couple weeks and slowly but surely we are starting to get into the groove.
One department I’m always trying to improve is our lunch box routine. Truth be told: we get stuck in a rut and tend to eat the same turkey & mayo way too often than I’d like to admit.
My latest solution? Swapping out mayo with Sabra hummus! It’s great on ANY sandwich but it works particularly well in these hearty hummus BLTs made with bacon, lettuce and tomato. Plus, hummus adds fiber and protein – neither of which mayo provides.
For the bread, I like to use a crusty whole grain bread which is sturdy enough to hold up to the hummus and tomatoes. If you want to keep it low carb when making lunch for yourself, simply use the lettuce as the bread.
Typically I’ll go with Sabra classic hummus for these BLT sandwiches but roasted red pepper or toasted pine nut would work great too.
On the side, fill your boxes up with a variety of fruits and veggies. We usually use whatever is in season (we still have berries in Michigan) or whatever my kids love most at the moment (my youngest loves baby carrots.)
Of course, don’t forget a little something salty (pickles) and sweet (dark chocolate chips and toasted coconut flakes.) What are your favorite lunch box goodies?? Send me your ideas – I need all the help I can get!

Hummus BLT Sandwiches
Ingredients
- 4 slices whole grain bread
- 4 tablespoons Sabra Classic Hummus or flavor of choice
- 4 slices tomato
- 4 slices cooked bacon
- 2 leaves lettuce
Instructions
- To prepare the bacon, bake for 10-20 minutes in a 400 degree oven. I like to use this guide for cooking bacon.
- To assemble the sandwiches, spread each slice of toast with 1 tablespoon each Sabra hummus. Top one side with two slices tomato, two pieces cooked bacon and lettuce then top with the second piece of bread before slicing and serving.

Liz, I make my bread with a sour dough starter that a friend gave me years ago! It’s made with instant potato flakes, sugar and warm water. Besides the whole wheat/flax meal bread I make a cinnamon raisin bread with it! It makes great French toast too!?
