A healthy spin on the popular candy bar, these No-Bake Almond Joy Energy Bites are packed with protein and fiber to give you long-lasting energy.

Snacks are vital to my being. Between chasing around my toddlers all day and hitting the gym five days a week, it’s pretty rare for me to last more than 3 hours without needing a little energy boost.

Not only are snacks another opportunity to nourish the body with vitamins and nutrients but they are essential if you want to avoid turning into a hangry monster.

As you’ve probably noticed, I’m a huge fan of almond joy anything. There is just something magical about combining frangrant coconut with rich chocolate and crunchy almonds. Since we’ve already tackled Almond Joy Granola and Gluten Free Almond Joy Pancakes, I decided to create No-Bake Almond Joy Energy Bites for on-the-go snacking.

To give these bites even more staying power, I added my new favorite protein powder from my friends at Bob’s Red Mill. This product is new to me but after using it for several weeks in smoothies, pancakes and more – I am a huge fan. Not only does it taste delicious (reminds me of malted powder) but it is unsweetened and has just 1 g of sugar per serving. Most brands out there have 6 g or more.

To create the perfect texture and consistency, I decided to pulse the ingredients in a food processor until finely chopped. Melted coconut oil and all natural honey are folded in before they are rolled into portable energy bites.

I love stashing them in my car for a post-workout snack or in my laptop bag when I’m working from a coffee shop. It’s a great way to avoid temptation and keep me satisfied until dinner.
No forks required.

I had a mini almond joy the other day, and I have to say, I’m pretty sure these would satisfy my cravings infinitely more! Chocolate and coconut are such a perfect pair!
Liz DellaCroce
They’re never quite as good as I remember – do you find that? I usually have one around Halloween and it’s always a bit of a let down.

You and me both! Thanks Kelly!

I have all of the ingredients, except whey? I don’t want to purchase it, since it has soy lecithin. Will this recipe work, if I use almond meal? Thanks.
Liz DellaCroce
Yes absolutely!! Enjoy!
Susan
Liz, I love it that you are putting protein powder into snacks like this. I would still probably put in a little more to up the protein level, but these would definitely be worth making. Almond joy, mounds… Yum!
Liz DellaCroce
You can definitely add more! Make it your own!
Susan
I made these tonight, using 5 scoops of chocolate Designer Whey, and cutting back a little bit on the almonds. I had to add more liquid (used about ½ cup water, not measured, just added enough to make the dough stick together). You would have loved the mess my kitchen and I were in by the time I got through. I washed my hands in my dishwater and had to change the dishwater… Using the flavored whey made them come out a bit too sweet for me, so next time I would use the unflavored whey which has no sweetener. My husband is out refereeing tonight, so I had plenty of time to play in the kitchen. We’ll see how he likes the surprise tomorrow.
Liz DellaCroce
Oh I’m so glad you tried them!!! They were devoured in 2 days in my house. I hope yours last longer!
Susan
They have to last longer here. One of us is participating in a 6-week healthy challenge… And both of us are trying to control our weight. :-)

Lori @ Foxes Love Lemons
I had no idea BRM made protein powder. I’ve actually been looking for some protein to add to my smoothies, but didn’t really know which kind to buy or where to start with it. I ALWAYS trust BRM because they’ve never let me down, so I think I’ll just keep my eye out for this now. And I’m with you – Almond Joy all the things. Except that I also buy a big bag of Almond Joy’s “for the trick or treaters” each year and then fake act surprised when kids don’t like coconut. Oops, looks like I have to eat them now. I have no choice, clearly.
Liz DellaCroce
YES!! Try BRM protein -I really think you’ll like it. lol You’re so funny!!!
Lauren @ Climbing Grier Mountain
I’m with Ali, definitely need to try the protein powder! I feel like I can never find a good go-to. Love these balls my friend!
Liz DellaCroce
Give BRM Protein a try – it seriously tastes like malted milk! Balls to the walls.
Kristina
Bob’s Red Mill has some fabulous new products lately – just visited with them at the Fancy Food Show…
these sound fantastic – I am always looking for new flavors for homemade snacks, this will be my next! thanks for the recipe!
Liz DellaCroce
Oh I’m so jealous!!! I hope to visit the factory one day!
Ali | Gimme Some Oven
Ha, if you want to avoid turning into a hangry monster. :)
These look fabulous, Liz! I need to try that whey protein powder.
Liz DellaCroce
Am I right or am I right? ;) I highly recommend BRM whey, Ali – I actually prefer the taste of the unsweetened protein powder. It lets the other flavors in whatever I’m eating shine through.
Stacey
Just wondering – I don’t like whey-based protein. How might this recipe work with a chocolate-flavored plant-based protein powder? Do you think if I used 3/4C of that instead of the 1/2C BRM and 1/4C Cocoa powder it would work? I would love to try these!
Liz DellaCroce
I don’t know why you couldn’t replace it 1:1 ratio? Let me know how it works!
mary d
looks good. I’m going to make these.
Liz DellaCroce
I hope you like them Mom!
