These crowd-pleasing Pesto Potato Caprese Skewers are the ultimate fast and easy appetizer recipe!

We are heading into one of my favorite seasons of the year – entertaining season!! Between Thanksgiving, Hanukkah, Christmas and the new year, I can’t wait for more excuses to host friends and family in our new home.

Since I’m a huge fan of last-minute casual get togethers, I love keeping my fridge and pantry stocked with versatile ingredients that can easily be transformed into something delicious. We always have a bag of Little Potato Company potatoes on hand so I decided to create a fast and easy appetizer to get you through the holiday season: Pesto Caprese Potato Skewers.

Boiled potatoes are thread onto a skewer along with cherry tomatoes and creamy mozzarella balls. To take them to the next level, I drizzle the skewers with pesto right before serving.

Pro Tip: Make a few extra skewers for snacking on while you wait for your guests to arrive. Trust me on this one.

My freezer is always stocked with homemade pesto from the summer but store-bought also works great. If the pesto is a bit on the thicker side, you can easily thin it out in a little bowl with a splash of lemon juice or olive oil.

Pesto Potato Caprese Skewers
Ingredients
- 16 Red and Yellow Creamer Potatoes or other Little Potato Company Variety halved
- 16 cherry tomatoes
- 16 small mozzarella balls (such as ciliegine)
- ¼ cup pesto (homemade or store-bought)
- 16 wooden appetizer skewers
Instructions
- Place whole potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork tender; strain and let cool slightly.
- Begin threading the skewers with one potato, one cherry tomato and one mozzarella ball. Place on a platter in a single layer then drizzle with pesto to serve.
