Sesame Ginger Sautéed Cabbage and Carrots is a quick and easy side dish bursting with Asian-inspired flavors such as sesame, ginger and scallion.
Admittedly, our family eats a lot of vegetables. Between our weekly Door to Door Organics box, frequent trips to the farmers market and my inability to cook small portions, we can’t get enough of them.
Of course, vegetables can get really boring really quickly if you don’t season them appropriately. Especially the humble cabbage which gets a bad rep thanks to memories of over-boiled cabbage on St. Patrick’s Day.
While I love the simplicity of grilling and roasting vegetables in a little olive oil and salt, I also enjoy putting an Asian spin on things. Low calorie, flavor-packed ingredients like fresh ginger, soy sauce and scallions can transport a humble vegetable like cabbage into a simple yet exotic side dish your family will devour in minutes.
