This easy, versatile slow cooker chicken salsa recipe is ideal for busy weeknights. Use in tacos, salads, burrito bowls and more!
My kids are both obsessed with taco night so we have one at least once a week in our house. Whether it’s fish, chicken, pork or beef, they are all about anything served in a warmed tortilla.
Whenever I cook meat in a slow cooker, I love adding a splash of beer for added flavor. Similar to a bit of white wine in a seafood sauce, the liquor in the beer adds incredible depth of flavor.
Since I always have jarred salsa on hand, I decided to add it to chicken for an easy slow cooker chicken recipe. Filled with tomatoes, onions, jalapeños and peppers, jarred salsa is low in calorie but heavy on flavor.
While my boys love eating the chicken in warmed tortillas, you can easily serve it over a salad to keep low carb (I love using this shredded Mexican slaw recipe!) or over a cauliflower rice burrito bowl.
For adding texture, toppings are key! My boys usually go for minced cilantro and onion but I love adding thinly sliced jalapeños and crunchy red cabbage.
No matter how you decide to serve up this slow cooker salsa chicken, I promise it will be a family favorite.

Slow Cooker Salsa Chicken

- 3 chicken breasts (boneless, skinless)
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon pepper or cayenne
- 2 cups salsa (any type)
- 8 ounces beer (optional)
- 1 medium onion (thinly sliced)
Instructions
- Place all the of spices (cumin, garlic powder, smoked paprika, oregano, salt, pepper/cayenne) in the bottom of a slow cooker insert and mix well. Add chicken breasts and evenly coat with spice mixture.
- Add salsa, beer and sliced onions to the slow cooker then heat on Low for 6 hours or High for 3 hours. Shred chicken with two forks to serve. Ideal in tacos, salads, burrito bowls and more.
