Strawberry season has finally arrived and I couldn’t be more excited! After what seems like years of eating apples, oranges and bananas, I can’t express how thrilled I am to bite into a just-picked strawberry. With floral and honey aromas, these juicy little berries are a far cry from the elephant-sized imposters from California. (No offense Cali!)
In just one week, strawberry season will come to an end here in Michigan so eat up and buy lots! Below are a few of my favorite quick and easy strawberry recipes. You’ll notice that I use very few ingredients because I believe that berries this fresh do not need much to taste great. Well clearly they taste amazing on their own but you know me – I like to kick them up a notch. Of course to keep the strawberry love going throughout the Winter, wash and stem the strawberries before laying in a single row on a cookie sheet. Freeze completely then store in a zip lock bag. Alternatively, you can always make jam with them like my lovely mother does every year.
Your fork is waiting.
Balsamic Strawberries: Dress sliced strawberries with balsamic vinegar and a bit of sugar. Let sit for at least 10 minutes before drizzling over Greek yogurt or ice cream.
Strawberry Smoothie: Blend fresh strawberries with grated fresh ginger, milk, yogurt, vanilla extract, honey and ice.
Fruit Salad: Combine strawberries with any other fruit you like such as blueberries, bananas and peaches. Mix vanilla yogurt with honey and pour over fruit.
Frozen Strawberry Basil Lemonade: Create simple syrup by heating equal parts sugar/water in a pan. When mixture comes to boil, remove from heat and add fresh basil. Let cool before removing basil. In a blender mix fresh strawberries with fresh lemon juice, basil simple syrup and ice.
