Lemon Chicken Orzo

Soup

A spin off the traditional Greek egg-lemon soup, this lemon chicken orzo soup comes together in under 20 minutes and is great for prepping ahead. Leftovers make a great lunch!

Ingredients:

Chicken broth

Orzo

Lemon juice

Cornstarch

Eggs

Chicken breast

Step 1

Bring the chicken broth to a boil, then add your orzo.

Step 2

While pasta simmers, make your cornstarch slurry.

Step 3

Finish the slurry by slowly whisking in the egg to the hot broth mixture.

Step 4

Slowly add your egg/broth mixture back into the large pot with the orzo, and stir until soup thickens.

Step 5

Add your chicken and spices to the pot.

Serve and enjoy!
