This protein-packed quinoa dish full of creamy acorn squash, crunchy apples, and toasted walnuts is naturally gluten free and vegan.

Step 1

Start by deseeding your acorn squash and cutting it into cubes. Then lay them on a prepared sheet pan, drizzle with olive oil, and season, then bake.

Step 2

Next, cook the quinoa. While the quinoa cooks, prepare the rest of your ingredients.

Step 3

Once your quinoa is finished, put it in the bowl and add the freshly chopped parsley, scallions, and apple slices.

Step 4

Then you’ll toast your walnuts and add them to the bowl. Once the acorn squash is finished roasting, add it to the bowl as well.

Step 5

Stir everything together, and drizzle in remaining olive oil, lemon juice, salt, and pepper. Toss well, then serve!
