Ripe bananas add the perfect amount of natural sweetness to these whole grain waffles that are naturally rich in protein, fiber and nutrients.

Have I told you how much I love the new waffle maker I got for Christmas? Don’t get me wrong, I love a good stack of pancakes but there is just something so magical about serving waffles for breakfast.
Before I started blogging full time, I spent many years working in the hotel industry for Marriott International. For over 7 years, I started my workday trying to ignore the intoxicating smell of buttermilk waffles pouring out from hotel restaurants. Waffles are delicious but the versions served in hotels aren’t exactly health food.

Fortunately, these beauties are made with Bob’s Red Mill Organic 7 Grain Mix so they are chok full of whole grains including spelt, kamut, oats and more. For a touch of natural sweetness, I threw in a couple overly ripe bananas. To be honest, you really don’t even need the maple syrup but if you insist (like my husband), just make sure it’s the pure stuff.
Your fork is waiting.

Whole Grain Banana Waffles

- ½ teaspoon nutmeg
- 3 large eggs (whisked)
- 1 ¼ cups skim milk
- 1 tablespoon melted coconut oil or canola oil

- Meanwhile, in a large bowl, stir together all ingredients until fully incorporated.
- Pour batter into pre-heated waffle maker 1/4 cup at a time and cook according to manufacturers instructions or until golden brown.
