Italian Giardiniera Salad

A light and refreshing Italian salad with an added extra kick for your taste buds. Ready on the table in less than 15 minutes.

Ingredients

  • 2 sweet bell peppers yellow red or orange
  • 1 red onion sliced
  • 1 large tomato cut into 1" pieces
  • 1/2 c giardiniera salad diced (pickled cauliflower, carrots, peppers, etc.)
  • 1/4 c lightly packed basil leaves chopped
  • 1/4 c Italian parsley chopped
  • 1 clove garlic grated
  • 2 tbs olive oil
  • 1 Juice of lemon
  • Sea salt and pepper to taste

Instructions

  • Place chopped peppers, onion, tomato, giardiniera, fresh herbs and garlic into a medium bowl.
  • Drizzle on olive oil, lemon juice and salt/pepper to taste.
  • Mix well and check for seasoning. **Feel free to add or substitute any veggies you have on hand including cucumbers, radishes, romaine, etc.
