Chipotle Black Bean Burgers

This recipe was inspired by one of my freezer favorites: frozen veggie burgers.

Ingredients

  • 15 oz can black beans drained and rinsed
  • 2 tbs water
  • 1 c red pepper minced
  • 1/3 c cilantro - minced minced
  • 2 tbs scallions - minced minced
  • 1 clove garlic grated
  • 2 tbs chipotle peppers in adobo - minced minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbs lemon juice
  • 1/2 tsp salt
  • 1/4 c panko bread crumbs
  • slices Avocado optional garnish

Instructions

  • Using a fork, carefully mash the beans with water until smooth.
  • Stir in all remaining ingredients and combine well.
  • Form burgers into four patties; set aside.
  • Heat a non-stick frying pan over medium-high heat.
  • Spray with non-stick spray or drizzle with a little canola oil.
  • Add burgers to the pan and cook for 3-4 minutes per side until warmed through.
  • Serve with avocado slices.
