Coconut Triple Berry Steel Cut Oats

Ingredients

  • 1 c skim milk
  • 1 c water
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 c steel cut oats
  • 2 tbs flax seed meal
  • 2 tbs walnuts chopped
  • 2 tbs shredded coconut unsweetened
  • 1 c mixed berries frozen or fresh
  • 2 tsp brown sugar or more to taste

Instructions

  • In a medium sauce pot, wisk together milk, water, cinnamon, vanilla and salt then bring to a gentle simmer.
  • Add steel cut oats and bring to a boil, stirring frequently.
  • Reduce heat to low and continue to cook until most of the liquid is absorbed, about 15 minutes; stir occasionally.
  • Towards the last few minutes of cooking time, mix in walnuts, coconut, berries and brown sugar. Cook additional 5 minutes then serve.
