Ingredients

  • 3 carrots peeled and diced
  • 2 celery stalks diced
  • 1 medium onion diced
  • 4 cups cooked ham diced
  • 2 cups Bob's Red Mill 13 Bean Soup Mix soaked overnight
  • 4 sprigs fresh thyme
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 cups chicken broth
  • parsley optional garnish

Instructions

  • Place all ingredients in a slow cooker and heat on low for 8 hours or high for 4 hours.
  • Check for seasoning and adjust accordingly. Garnish with fresh parsley.
