Crispy Za'atar Potatoes

Potatoes are roasted with olive oil and za'atar in this easy and flavorful vegetarian side dish recipe.

  • 24 potatoes Blushing Belle or other Little Potato Company variety sliced in half
  • 2 tablespoons olive oil
  • 2 tablespoons za'atar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • minced scallions optional garnish


  • Pre-heat oven to 450 degrees and line a baking sheet with foil. 
  • In a small bowl, toss potatoes with olive oil, za'atar, salt and pepper to coat. Spread on baking sheet in a single layer and roast until crispy, about 20 minutes. Sprinkle with scallions to serve if you wish.
