Slow Cooker Italian Chicken and Potatoes

A healthy version of the ballpark classic, sausage and peppers, I've added in lean chicken breast, hearty potatoes and plenty of peppers and onions in this easy slow cooker dinner recipe.

  • 1 pound chicken breasts boneless, skinless
  • 24 potatoes Terrific Trio or other Little Potato Company variety
  • 1 red bell pepper seeded and sliced
  • 1 medium onion thinly sliced
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon dried oregano or 1/2 teaspoon fresh
  • 1/2 cup dry red or white wine optional


  • Place all ingredients in slow cooker and cook on Low for 3-4 hours or until chicken is cooked through. Remove chicken and slice it on a cutting board before serving with the potatoes, peppers and onions. Garnish with fresh oregano if you wish.
