Citrus Salad with Goat Cheese and Pistachios
This quick and easy Winter citrus salad is topped with goat cheese, pistachios, mint and olive oil. Simple enough for a casual weeknight dinner but elegant enough for entertaining.

Ingredients

oranges
any type, ideally seedless

grapefruits

pistachios
roughly chopped

ounces
goat cheese

tablespoons
fresh mint
minced

tablespoons
olive oil
salt and pepper to taste
Instructions
Using a sharp paring knife, carefully peel the outside of each citrus fruit. Next, thinly slice each and lay on a large platter or plate.
Crumble goat cheese over the fruit then sprinkle with all remaining ingredients. Season with salt and pepper to taste before serving.
