sweet bell peppers
yellow red or orange

red onion

large tomato

giardiniera salad
diced (pickled cauliflower, carrots, peppers, etc.)

lightly packed basil leaves

Italian parsley
chopped

Sea salt and pepper to taste

Instructions
Place chopped peppers, onion, tomato, giardiniera, fresh herbs and garlic into a medium bowl.
Drizzle on olive oil, lemon juice and salt/pepper to taste.
Mix well and check for seasoning. **Feel free to add or substitute any veggies you have on hand including cucumbers, radishes, romaine, etc.
