These Greek-style roasted potato wedges are roasted with lemon, oregano and garlic until tender and golden brown. The ultimate quick and easy side dish recipe - ideal with chicken, fish or lamb.
Preheat oven to 425 degrees and line a baking sheet with foil.
Skatter potato wedges on the baking sheet then toss well with all remaining ingredients (olive oil through chili flakes.) Roast until crispy, about 45-50 minutes, tossing once halfway through.

This recipe works well with just about any potato variety but I find Yukon gold or Russets are the best. If you have chicken pieces on hand, you can also roast them in the same pan - I just double all of the other ingredients and toss well.
