Ingredients

- Potatoes: Yukon Gold potatoes are ideal because they become creamy inside and crisp up beautifully in the oven. Russet potatoes can also work!
- Lemon: Lemon juice and zest are used to season these potatoes with Greek flair.
- Oregano: Earthy, peppery, and classic in Greek cuisine.
- Garlic: Adds nutty, pungent, and sweet flavor as it cooks.
How to Make Greek Roasted Potatoes

Step 1. Start by cutting your potatoes into small pieces and lay out on a baking sheet.

Step 2. Drizzle the potatoes with olive oil.

Step 3. Then use a microplane to add freshly grated garlic.

Step 4. Then use the microplane to zest the lemon, and then juice the lemon over the potatoes as well.

Step 5. Finally, season the potatoes with oregano, salt, and pepper.

Step 6. Toss everything together until potatoes are evenly coated, then toss in the oven at 425 for around 45 minutes until crispy on the outside, and soft on the inside.

Once finished, top with crumbled feta cheese and fresh herbs like parsley or dill. Serve and enjoy your Greek potatoes!
