This healthy Ramen Broccoli Slaw is perfect for entertaining outdoors, and is filled with delicious Asian inspired flavors.

Ramen broccoli slaw.

Nothing tastes better with grilled meats or picnic spreads than a refreshing salad. This tart and tangy Ramen Broccoli Slaw is perfect for outdoor entertaining. Is ramen the healthiest ingredient in the world? No, but this slaw is dairy and egg free, dressed with a vinaigrette instead of mayo.

Ingredients

  • Broccoli/carrot slaw: I use a pre-packaged slaw mix from the grocery store that can be dressed up however you want.
  • Toasted almonds: Toasting almonds in a dry pan releases natural oils in the nut and enhances the flavor.
  • Ramen: The raw noodles add a satisfying crunch while the chicken flavor packet helps to season the slaw.
  • Scallions: Also called green onions, they have a mild, somewhat sweet onion flavor.
  • White vinegar: Tart, acidic flavor that is bitter on its own, but pairs wonderfully with other ingredients to make delicious dressings and sauce.
  • Canola oil: Pretty neutral in flavor, it blends well with the vinegar and seasoning to dress the slaw.
  • Sugar: Balancing the tartness of the vinegar and the saltiness of the ramen flavoring.

How to Make Ramen Broccoli Slaw

Start your Ramen Broccoli Slaw by toasting your sliced almonds in a dry pan.

Then add the toasted almonds to the broccoli coleslaw mix in a large bowl.

Next, freshly slice your scallions and add them to the bowl.

Then take your raw ramen noodle block, and break it up into bite sized pieces.

Next, to begin dressing the slaw, drizzle the white vinegar over the top.

Followed by the canola oil.

Then sprinkle the chicken flavor season packet.

And finish with the sugar.

Toss everything together until the slaw is evenly coated in the dressing.

Shake Things Up

  • Up the Asian flavors. Instead of white vinegar, try using rice vinegar and adding some sesame oil to the dressing.

Ingredients
 

  • 3 cups brocolli/carrot slaw (pre-packaged)
  • ¼ cup almond slices (toasted)
  • 1 package chicken ramen (uncooked)
  • 4 scallions (sliced)
  • 3 tablespoons white vinegar
  • 2 tablespoons canola oil
  • 1 tablespoon sugar

Instructions
 

  • In a medium bowl, toss broccoli slaw with toasted almond slices.
  • Add the raw ramen noodles broken into bite sized pieces as well as the scallions.
  • To prepare dressing, whisk white vinegar with canola oil, stevia packets and chicken seasoning packet from the ramen.
  • Toss well and serve – tastes even better after it has been sitting.

    hi again Liz,
    i adore anything crunchy and have had this slaw from TJs a few times, but usually make the salad as described on the package! i’m anxious to try yours, but am perplexed at your use of the seasoning in the ramen pkg which is usually just a bunch of nasty ingredients, plus msg..urgh!
    please correct me if theyve changed and i’m wrong!

      You are right, but depending on the brand of ramen you use, I don’t believe they all have MSG. I understand the concern, but all things in moderation and it’s still chalk full of broccoli and cabbage!
