The holidays are right around the corner – are you ready? Don’t worry, I’m not either. To help you round out your holiday menu, I wanted to share a healthy vegetable side dish to serve alongside the turkey, beef brisket, or crispy latkes. This Roasted Acorn Squash with Tahini Sauce couldn’t be easier to make and is always a crowd-pleaser. Scented with warm cinnamon and roasted in olive oil, each slice of acorn squash becomes caramelized and tender.

Ingredients

  • Acorn squash: A winter squash with a somewhat sweet and nutty taste.
  • Olive oil: A heart healthy oil that helps coat the squash and evenly roast it to a delicious, caramelized state.
  • Cinnamon: Warm, somewhat sweet and spicy flavor that pairs well with the tahini sauce.
  • Tahini: Made from sesame seeds, it has an earthy and nutty taste.
  • Lemon juice: Bright, fresh, citrus flavor and acidity that balances out the other ingredients.
  • Garlic: Aromatic and pungent, the garlic warms when the sauce is drizzled over the roasted squash that elevates and sweetens the flavor.

How to Make Roasted Acorn Squash with Tahini Sauce

Start your roasted acorn squash with tahini sauce by taking your acorn squash and cutting it in half. Then cut off each end.

Then take the halves and cut them into slices about 1/2 to 1 inch thick.

Lay them out in a single layer on a prepared baking sheet.

Drizzle the squash with olive oil and flip to drizzle on both sides.

Sprinkle with cinnamon, kosher salt, and black pepper, and flip again to season on the other side. Then toss in the oven at 400 degrees for about 30 minutes, or until golden- brown.

While acorn squash is roasting, make the tahini sauce by mixing the tahini with lemon juice, garlic, and some salt.

Ingredients
 
 

  • 1 acorn squash seeded and sliced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon salt divided
  • ½ teaspoon black pepper
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic minced

Instructions
 

  1. Preheat oven to 400 degrees and line with foil. Spray with cooking spray and scatter the squash slices in a single layer on the pan. 
  2. Drizzle the squash slices with olive oil and toss to coat on both sides. Sprinkle with cinnamon, half of the salt (1/2 teaspoon) and pepper then toss again. Bake until golden brown and tender, about 25-30 minutes.
  3. While the squash is roasting, whisk together tahini, lemon juice, garlic and remaining salt in a small bowl. Add warm water, 1 tablespoon at a time, until you’ve reached desired consistency. Drizzle over roasted squash to serve.

    This sounds wonderful. I wish my husband liked tahini as much as I do (until yesterday when I tried to stir up a can of tahini – Joyva brand, the one my Lebanese boyfriend of a very long time ago introduced me to – which ended up slopping all over me). Tahini, lemon and cinnamon, for me, is a combination made in heaven. I like the idea of a sauce like that for winter squash.
