Warm up with savory Asian chicken soup with soba noodles, a comforting, flavorful bowl packed with tender chicken, veggies, & umami-rich broth in under an hour.

Nothing helps you beat the Winter blues like a warm bowl of steamy chicken soup. It literally warms you up from the inside out. Today I am sharing my favorite Asian-inspired twist on the classic chicken noodle soup. In addition to being loaded in flavor and bursting with nutrients, this Asian Chicken Soup with Soba Noodles is a one pot meal providing all the protein, carbs, and veggies in one dish.

Ingredients

- Chicken: Chicken breast is an affordable, lean source of protein.
- Soba noodles: Japanese noodles that are made from buckwheat flour, they are somewhat chewy and higher in protein than other pasta. They are also gluten-free, if made the traditional way (just double check).
- Cabbage: I usually use napa cabbage, but if not, normal cabbage works, or even bok choy!
- Chicken broth: Acts as the base of the soup.
- Scallion soy sauce: Soy sauce, rice wine vinegar, mirin, sesame oil, ginger, and chili paste amp up the Asian flavors in this soup.
How to Make Asian Chicken Soup with Soba Noodles

Step 1. Shred your cabbage and mince your scallions.

Step 2. Pat your chicken dry, then cut into slices or chunks.

Step 3. Cook your soba noodles according to package instructions. Then drain and set aside.

Step 4. While soba noodles are cooking, whisk together the scallion soy sauce, and bring the chicken broth to a boil in a large pot.

Step 5. Once the chicken broth has come to a boil, add the soy sauce mixture, and chicken breast.

Step 6. Finish with the cabbage, then let simmer until chicken is fully cooked through.

To serve, add soba noodles to a bowl and pour a scoop of chicken soup over the top. Garnish with lime juice, sriracha sauce, onion, or cilantro, and enjoy!

- Prepare soba noodles according to package instructions and set aside.8 ounces soba noodles
- Bring chicken broth to a boil in a large soup pot.4 cups chicken broth
- Meanwhile, wisk together scallions, sugar, ginger, chili garlic paste, vinegar, soy, mirin and sesame oil in a small bowl.1/2 cup scallions, 1 tablespoon sugar, 2 tablespoons ginger, 1 tablespoon chili garlic paste, 1/4 cup rice wine vinegar, 1/4 cup soy sauce, 2 tablespoons mirin, 2 tablespoons sesame oil
- Once broth comes to a boil, add scallion soy mixture, sliced chicken breast and cabbage. Bring to a boil and let simmer for 3 minutes or until chicken is cooked through.12 ounces boneless chicken breast, 4 cups napa cabbage, 3 cups red cabbage

Yes! Rotisserie chicken or leftover cooked chicken works perfectly and makes this soba noodle soup even faster for busy weeknights.
Simply swap the chicken for tofu or edamame and use a good-quality vegetable broth instead of chicken broth!
Store leftover soup in an airtight container in the refrigerator for up to 3 days. If possible, keep the noodles separate and add them when reheating.
