Summer is here, the pool is open, the beach bag is packed and the days are long! What’s not to love, right?

Of course, summer also brings its fair share of challenges which I touched upon briefly in 7 Simple Ways to Stay Healthy During Summer Vacation. After all, we have kiddos home from school now, lazy beach days which often involve unhealthy snacking, eating on the road during vacation, etc.

Believe me, I get it. That’s why I’m so passionate about starting each day with a nutrient-packed smoothie, as much as possible. Easy to make, versatile and portable, I will often blend one up before hitting the road – even if it’s just to run errands here in town.
For a healthy spin on the classic summer cocktail, I decided to create a Piña Colada Protein Smoothie with just 5 simple ingredients! Made with juicy pineapple, creamy coconut milk and Bob’s Red Mill Protein & Fiber Nutritional Booster, each glass tastes more like dessert than a healthy breakfast.

If you don’t have pineapple on hand, mango, peaches or strawberries would be just as delicious. Full fat coconut is preferred for this tropical recipe but any type of milk you have on hand works.

Piña Colada Protein Smoothie

Ingredients
- 1 cup diced pineapple
- 1 ripe banana
- ⅔ cup full-fat coconut milk (full fat)
- ⅓ cup Bob’s Red Mill Protein & Fiber Nutritional Booster
- 1 teaspoon vanilla
- ice to thicken
Instructions
- Add all ingredients to a high speed blender and puree until smooth before serving.
