Fire up the grill for this easy and flavorful Grilled Bratwurst with Peppers, Onions, and Fennel – perfect for summer cookouts, weeknight dinners, or game day gatherings.

If it’s summer, you know I’m usually outside at my grill for dinner. I’m always looking for new ways to try things grilled, which is why I was so excited the last time I visited my local D&W Fresh Market. They’ve started up their Brat Shop for the summer, with delicious bratwursts always available, along with a new flavor of the week!

So of course I couldn’t leave without getting some, and whipped up these delicious Grilled Bratwurst with Peppers and Onions that I’m sure you and your family will enjoy, too!

Ingredients

  • Bratwurst: Stick with classic beer brats, cheddar brats, or try D&W’s flavor of the week!
  • Onion: I used a white onion for mild flavor and quick cooking.
  • Peppers: Red bell peppers are usually my first choice, for the bright color and the sweetest flavor.
  • Fennel: Fennel bulb’s distinct, anise-like flavor adds complex flavor and balances out some of the sweetness.

How to Make Grilled Bratwurst with Peppers and Onions

Step 1. Place the sliced peppers, onion, and fennel in a large bowl and use a microplane to grate in the garlic.

Step 2. Add the dried oregano, chili flakes, olive oil, and salt and pepper to taste, then toss well.

Step 3. On a grill preheated over high heat, add the brats and your veggies in a grill basket. Reduce the heat, and close the lid. Rotate the brats every 4-5 minutes, and toss the veggies.

Step 4. Once the brats are slightly charred and reached an internal temp of 160, remove them from the grill. You can serve them as is, or slice them.

You can serve the brats in hot dog buns topped with mustard and the grilled vegetables, or serve them on a plate. Either way, you’ll enjoy your Grilled Bratwursts with Peppers and Onions!

Frequently Asked Questions

Do I need to boil brats before grilling?

No, you don’t. Some people prefer to, but I never have.

What cooks first, peppers or onions?

Peppers and onions can be cooked together, and will finish at around the same time. If you’re looking for deep caramelization, onions might take a tad bit longer. But when grilling, I’ve always done them at the same time.

Is it better to cook veggies or meat first?

Usually I do meat first, to make sure it is cooked to the right temperature. But when grilling, I frequently cook them at the same time, and just remove whichever is finished first.

Ingredients
 
 

  • 4 bratwursts
  • 2 red bell peppers seeded and sliced
  • 1 large onion peeled and thinly sliced
  • 1 bulb fennel trimmed, cored and thinly sliced
  • 6 cloves whole garlic you can peel but there’s no need
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon red chili flakes
  • salt and pepper to taste
  • fresh basil optional garnish

Instructions
 

  1. Pre-heat grill to high heat.
  2. Reduce grill to medium heat then grill the bratwursts with lid closed, rotating every 4-5 minutes, until slightly charred on all sides (about 15-17 minutes.)

  3. Place the peppers, fennel, onion and garlic in a large bowl and toss well with olive oil, oregano, salt and pepper to taste plus chili flakes. Place on a grilling basket and grill until tender and caramelized, tossing regularly with tongs, about 10-12 minutes.
    2 red bell peppers, 1 large onion, 1 bulb fennel, 6 cloves whole garlic, 2 tablespoons extra virgin olive oil, 1 teaspoon dried oregano, 1/2 teaspoon red chili flakes, salt and pepper
  4. Garnish with fresh basil to serve.
