A lunchtime classic, these chicken salad sliders are served on whole grain rolls and made with real mayonnaise and a splash of tangy dill pickle juice.

While I frequently host large dinners, I love doing simpler lunch gatherings, too. My Chicken Salad Sliders are an easy and delicious entrée for a picnic or lunch party. Made with real, creamy mayonnaise, tangy pickle juice, and crunchy celery, this classic sandwich is a hit with adults and kids alike!

Ingredients

  • Chicken: Shredded or cubed chicken is the star of the show. I like to use a rotisserie chicken to save time!
  • Celery: Mild flavor, but super crunchy for a great texture and full of nutrients.
  • Onion: I use a sweet onion to keep the flavor more mild and balance out with the tangy taste of some other ingredients.
  • Yogurt: I like to use plain yogurt in my chicken salad for extra creaminess and a bit more of a tangy flavor.
  • Mayonnaise: Mayo flavor is part of a classic chicken salad, and keeps the sandwich from being too dry.
  • Pickle juice: Dill pickle juice adds just another depth of flavor and zest to the sliders.
  • Lemon juice: Bright, acidic, fresh flavor that pairs well in the salad.
  • Dijon mustard: A bit sharper in flavor than yellow mustard, it enriches the overall flavor of the sandwich.
  • Rolls: Any slider buns will work, but I like to use whole grain rolls.

How to Make Chicken Salad Sliders

Start your chicken salad sliders by dicing your celery and onion.

Then prepare any toppings. I like to include sliced tomato, lettuce or another leafy green, and red onion.

Then mix your cubed chicken, celery, and onion with the yogurt and mayo. Stir in the pickle and lemon juice, Dijon mustard, and season with salt and pepper.

Assemble your sliders by layering the chicken salad and your chosen toppings on your buns or rolls.

Serve at room temperature or chilled, and enjoy your Chicken Salad Sliders!

Switch Things Up

  • Sweet instead of tangy. If you want to throw a sweet twist on your chicken salad, instead of using pickle juice, add sliced red grapes! Crunchy, juicy, and sweet, they add a great flavor combo.
  • Make them big. Of course, instead of preparing as sliders, you can use full-sized buns or bread and make regular chicken salad sandwiches.

Ingredients
 
 

  • 2 cups cooked chicken breast cubed
  • 2 celery stalks minced
  • ½ cup minced onion
  • ½ cup plain low fat yogurt
  • ¼ cup real mayonnaise
  • 2 tablespoons dill pickle juice
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • salt and pepper to taste
  • 4 whole grain rolls and Bibb lettuce to serve

Instructions
 

  1. In a small bowl, whisk together yogurt, mayo, pickle juice and lemon juice. Stir in cooked chicken, celery and onion then season with salt and pepper to taste.
  2. Slice rolls in half and top with equal parts chicken salad and lettuce if you wish.
