Earlier this summer we took advantage of Michigan’s delicious strawberry crop and stocked our freezer full of juicy ripe berries in their peak of freshness! As a result, my boys have been begging for this strawberry “ice cream” which doesn’t actually have any cream, milk, or sugar.

The secret to this healthy and easy strawberry ice cream is nothing more than rock-solid frozen bananas and strawberries! When we run out of strawberries, we go back to our old standby of Vegan Chocolate Peanut Butter Ice Cream.

Of course, with a dessert this healthy you can’t say no to a 4-year-old’s request for whipped cream but you can definitely skip it. For another flavor dimension and crunch, try topping it with my 2-Ingredient Peanut Butter Magic Shell. It’s like a PB&J in every bite.

2-Ingredient Strawberry Ice Cream
Ingredients
- 4 frozen bananas (quartered)
- 2 cups frozen strawberries
Instructions
- Place all ingredients in a high-speed blender or food processor and slowly pulse, 15 seconds at a time, until the mixture is smooth and creamy, scraping down the sides as you go. Note: This process may take a couple of minutes so be patient.
- Serve immediately or freeze in an air-tight container for up to 5 days.
