This quick and easy Winter citrus salad is topped with goat cheese, pistachios, mint and olive oil. Simple enough for a casual weeknight dinner but elegant enough for entertaining.
We eat salads all year round and while I love our go-to every day Syrian green salad, I also love changing up my salads throughout the year to fit the season. In fact, eating seasonal produce is a great way to maintain your healthy lifestyle and prevent boredom because you aren’t eating the same foods all year round.
In the winter months, I love using citrus fruit to create a salad because everything is in season including oranges, grapefruits, pomelos, lemons and more.
When is Citrus Fruit In Season?
It alters slightly depending on the variety but in general citrus fruit is in season from November to March. For this particular salad, I used seedless navel oranges, Ruby red grapefruits, and a beautiful, large pomelo.
What is a Pomelo?
The largest of all citrus fruit weighing between 2-4 pounds each, pomelo is native to South and Southeast Asia. There are a few different varieties available but all are larger than grapefruit. The least acidic of all citrus fruit, pomelos aren’t as sour as other citrus fruit.
To create this winter citrus salad I start by peeling each fruit using a sharp knife. Next, I thinly slice the citrus into wheels. You can lay them flat on a large platter or plate or toss in a large bowl if you prefer. I love the way it looks on a platter so that’s my personal preference.
Once you’ve sliced all the citrus fruit you simply drizzle with olive oil, salt, and pepper then scatter with chopped pistachios, mint and goat cheese.
How Far In Advance Can I Prepare This Salad?
This salad can be prepared up to 3 hours in advance. You can serve this dish chilled or room temperature but personally I love it at room temperature when the goat cheese flavors come out the best.
