Eggplant (also known as aubergine in the UK) is one of my most favorite vegetables. Luckily, it also happens to be my husband’s favorite as well.
In the summer months, we love to throw it on the grill with olive oil and oregano. In the winter we use a lot of heartier Lebanese stews.
