Packed with protein and healthy fats, it’s a savory, satisfying start to any morning, whether you’re powering through emails or prepping for a weekend adventure. Even my boys like to grab it for an easy breakfast!
If you want to skip the ham, feel free to double up on the eggs. Smoked turkey or bacon works great, too.
Ingredients

- Avocado: Creamy in texture, and full of healthy fats and nutrients.
- Ham: I like to use a smoked ham, sometimes a honey ham, layered thin or thick.
- Eggs: I prefer sunny side up, so that the egg yolk is runny, but you could do over easy or over medium as well.
- Arugula: Also called rocket, it’s a bit peppery in flavor.
How to Make Avocado Toast with Egg, Ham, and Arugula

Step 1. Start by cutting and toasting your bread of choice.

Step 2. While bread is toasting, fry your eggs in hot pan to your preferred style.

Step 3. Slice your avocado and wash and dry your arugula.

Step 4. Layer the avocado on you toast, followed by the arugula and ham, finished with the egg.

Season with salt and pepper to taste, then serve and enjoy your Avocado Toast with Egg, Ham, and Arugula!

- Place bread in toaster and toast until golden brown.
- While bread is toasting, heat a large skillet over medium-high and spray with nonstick cooking spray. Cook eggs to preference (I like mine sunny side up but scrambled or over hard works too.)
- Remove toast from toasted and spread 1/4 of the avocado on each slice, using a knife to carefully press it into the bread like a spread. Sprinkle to taste with salt and pepper.
- Top each avocado toast with arugula, ham and an egg. Sprinkle again to taste with salt and pepper before serving.
