No lie: I probably eat this once or twice a week. I love spreading it on bread with a sprinkle of sea salt and cilantro sprigs or in a simple avocado egg sandwich.

Other options to add to avocado toast beyond tomato would be to have thin slices of red onion. That would make this taste more amazing than it already is. Bacon strips are also an option as well.

If you’re not a fan of cottage cheese spreadable cheese with chives would be a good substitute.

  1. I needed a easy thing to make and eat for our stay at a cabin and I did not think cottage cheese and bread/toast would be good but this is outstanding!!! I love it. I will have to wait till summer for fresh tomatoes, but the avocado and cottage cheese was good enough. I also only like Michigan brand cottage cheese. I can’t stop eating it now! Thanks so much!!

  2. I decided to make this for my sister and niece and it was a huge hit! It is now our need lunch fast meal. I use fat free cottage cheese and put cucumber slices out in case someone wants a change from the avocado.

  3. I am eating this as I type and it is delicious! I added some cheddar to it and I am in love. I’m surethis will be a common thing for me now.

  4. I pretty much have to go with no-cook breakfasts or I tend to go without altogether. I don’t give myself any time in the morning for cooking breakfast. I love the sound of this – healthy and filling but so flavorful!

  5. Why have I never thought of the idea to pair avocado with toast? So simple! And I love your idea to add in the cottage cheese and tomatoes. I’ve got tomatoes from my in-laws garden that I’m just itching to use. This is perfect. :)

    1. Oh yes girl avocado and toast has endless opportunities!!! Enjoy your tomatoes – I am loving tomato season this year!!

  6. Egg, avocado, bacon? How could I say no?!?! Liz – everything you do is just so beautiful (and BONUS: Delicious to boot!). Keep the glamour shots coming!
