    • 8 slices whole grain bread (toasted)
    • 2 cups cottage cheese (low fat)
    • 1 ripe California avocado (sliced)
    • 1 tomato (sliced)
    • ½ red onion (sliced)
    • salt and freshly cracked pepper (to taste)


    • Lay toasted bread slices out on a large cutting board and top each one with ¼ cup of cottage cheese. Sprinkle with salt and pepper.
    • Top cottage cheese with avocado, tomato slices, and red onion slices, then season with another pinch of salt and pepper. Serve.

    1. I needed a easy thing to make and eat for our stay at a cabin and I did not think cottage cheese and bread/toast would be good but this is outstanding!!! I love it. I will have to wait till summer for fresh tomatoes, but the avocado and cottage cheese was good enough. I also only like Michigan brand cottage cheese. I can’t stop eating it now! Thanks so much!!
