Ever since my boys were babies, they have been avid oatmeal loves. Or, as my youngest used to say, “eat-meal” lovers. It was a sad day when he realized the correct way to pronounce oatmeal so in the meantime I’m going to happily oblige with his daily requires for this yummy breakfast.

Since we’re still kicking it around 90 degrees here in Michigan, I’ve been loving overnight refrigerator oats. It is nothing more than the combination of oats, yogurt and milk with any seasonal fruits and your favorite spices. In celebration of peach season, I decided to make a peaches and cream version of overnight oats scented with vanilla and nutmeg.

Juicy, ripe locally grown peaches are folded into the oats and served on top along with chopped walnuts for added texture, protein and healthy fats. Since it can be prepped up to 4 days ahead of time, breakfast is on the table faster than you can say “eat-meal.”

Ingredients
 
 

  • 2 cups old fashioned oats
  • 2 cups vanilla Greek yogurt
  • 2 cups low fat milk
  • 2 large peaches pitted and diced
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • chopped walnuts optional garnish

Instructions
 

  1. Place all ingredients in a large bowl and mix well. Store in an air-tight container and refrigerate overnight.
  2. Serve with diced peaches and chopped walnuts if you wish.

    Sounds delicious. I make oatmeal that tastes like Oatmeal Cookies. Want the Recepies? It was a great way to get my kids to eat oatmeal, which was a staple when they were growing up.

    Can you use frozen peaches? Should I thaw them first, then add to oat mixture to soak overnight or just toss them in frozen and they will thaw by the morning?

      Yes you can use them – they will thaw overnight in the fridge!

    I don’t know why, but I can eat hot stovetop oats at ANY time of year, even in this hot weather! I guess I’m weird ;) But I love the peaches and cream combo in these oats, must try! :)

    I love overnight oats. I often add peaches in the morning, but it is such a good idea to allow them to marry with the other flavors overnight too.

    I’m a huge fan of overnight oats, and just happen to have a bunch of peaches that we bought at a farm market. Definitely want to make these.

        Threw this together last night and had it this morning – this is a wonderful recipe, definitely a keeper. I did add a little protein powder, and cut the nutmeg to about ½ teaspoon, which was plenty for my tastes. This was a great way to use the last of my farm stand peaches.

    I love that this recipe does not contain chia seeds! So many overnight oats call for them and im not a fan! Looks delicious!
