    Liz Washing Beans

The star of the dip is creamy white beans and tangy feta. Any type of white bean will work such as navy beans, cannellini beans or old northern beans. In fact, keeping my pantry stocked with canned beans is one reason I’m always ready to entertain at a moment’s notice.

Next, I puree the beans with creamy feta cheese, scallions and fresh herbs. Dill, mint, basil and parsley all work well – just use whatever you have on hand or can get at the store.

    1. Nice combination of flavours here! I did find the garlic very pungent so next time I think I will whiz up the garlic and lemon juice first, let that sit for 10 minutes and then add remaining ingredients. Really helps the garlic mellow. Also I added some tahini.
